Time in the kitchen + Pretzel Caramel Brownies – w/e 2nd May 2021

I baked this week! And harvested magnolia petals from my garden and pickled them! Yep, pickled in a sweet vinegar brine. I saw Olia Hercules do it. I also made a syrup with some of them a la Alexis The Black Forager and used the syrup to caramelise some nuts. It gave them a delicate gingery, floral hint.

The baking:

  1. Vegan Banana Bread by Kat of The Loopy Whisk. Banana bread doesn’t need an egg replacer, just baking powder/bicarb soda. No one would know this is vegan. I have my own recipe for vegan banana bread, but I liked Kat’s a lot, too.
  2. 3pm Oat Chocolate Biscuits by Nicola Lamb. I switched out the butter for Flora vegan butter and they were perfect. I made them twice they went so quickly and were so good.

And I was sent a care package after a sleepless time from fellow mum Maria of Southeast Cakery.

  1. The Pretzel Caramel Brownie was my favourite. Sticky, sweet, crunchy and salty. Exactly the kind of food a sleep-deprived mama needs.
